Characteristics
The FILOGRIND/AUTOGRIND meat cereal range produces a large number of incisions in the meat muscle, increase the area for the extraction of myofibrillar proteins and contribute to the reduction of cooking loss. As a result, they improve the yield, minimize the defects of intermuscular binding and avoid the appearance of holes in the incision. They help to obtain an improved distribution of the brine in the meat mass and smaller deviations in the analytical results of the finished product.
